Ingredients
  

  • 5 Roma tomatoes
  • ¼ medium white onion
  • 2 garlic cloves
  • 2 –4 chipotle peppers in adobo
  • 1 tablespoon adobo sauce
  • ¼ cup water
  • 1 tablespoon lime juice or 2 teaspoons vinegar
  • 1 teaspoon kosher salt
  • Pinch of sugar optional

Instructions
 

  • Char tomatoes, onion, and garlic on a hot comal
  • Let cool slightly.
  • Blend all ingredients until smooth.
  • Adjust seasoning and consistency.
  • Rest before serving.
